Gearing up for Soup Season---make your own cream soup mixes!

As we head into the Fall season, we've been experiencing some ups and downs in temperatures.  The other day was chilly, and I needed to pull out a sweater.  Today, we are nearing the 90's.  However, when the temps do go down and the chill winds blow, I begin to dream about warm and cozy soups.  

 

In my last book review entry for the 1 Stock, 100 Soups, there was a recipe for Jerusalem Artichoke soup.  Why couldn't I whip up a batch using my chicken cream of soup mix?  I dug up 1 pound of the Jerusalem artichokes growing out by the greenhouse.  I washed them carefully and peeled and chunked them.   I added my cream of chicken mix with water instead of the vegetable stock.  I added enough of the mix to make it as thick as what I wanted.  The chicken flavor added that special touch, as well as adding a creamy quality.  It truly was YUM.

 

Are you ready for soup season?  Best way to prepare is to have some easy to mix up soup mixes you can keep handy on your pantry shelves.  Versatile, and cost-saving you are sure to love them as I do. Then I began thinking...since I learned about the cream/dried soup mixes, it has been a game changer in my cooking.  Not only can I add herbs and flavors easily, but it saves me a lot of money.  I was buying these expensive soups and mixes at the grocery that may have not so great ingredients.  Once I learned how simple it was, WOW.  Eye-opener.   Most of the ingredients we all have on hand.  It takes only moments to end up with a jar that can last quite a long time.  Let me tell you, I have become addicted to mixing these things up.  My next try is a cream of mushroom soup that isn't too expensive for me to mix up and I will be set.

  For right now, here are two of my favorites:

 

Cream of Chicken Soup Mix

For 1 quart of Mix: 1 3/4 cup flour, 1 1/2 cup dry milk powder, 3 Tablespoons Chicken bouillon powder, 1 1/2 Tablespoons dried minced onion.

For Soup: Whisk together 1/2 cup mix with 1 1/4 cups water and heat until thick.

 

Onion Soup Mix (Double or triple amount for more to store)

1/4 cup dried onion

2 Tablespoons beef Boullion powder

1/4 teaspoon onion powder

1/4 teaspoon dried parsley

1/8 teaspoon celery seed

1/8 teaspoon paprika

1/8 teaspoon black pepper

Mix and store in a sealed jar.  To make soup, add these ingredients to a saucepan and add 4 cups water.  Bring to a boil and simmer on low 10 minutes before serving.  3 Tablespoons of the mix makes the equivalent of 1 packet of commercial mix.

 

If you put these mixes in your pantry, next time you get a craving for soup, you will be ready with instant satisfaction.  As I collect and test more mixes, I will keep you updated.
